Happy pre-Thanksgiving! I have a sense that someone out there needs a really easy, mild vegetable recipe that tends to be popular with picky eaters. If that’s you, I have you covered! Of course, it involves corn (you can take the girl out of Iowa, but…)




Savory Corn Pudding
2 full size cans whole-kernel corn, drained
5 eggs
3 tablespoons flour dissolved in 3/4 c milk
6 tablespoons butter, melted
salt, pepper
Heat oven to 400 degrees. Butter a 2-quart casserole. Place corn, eggs, flour mixture and butter into a food processor or blender and process until fairly smooth. Season with salt and pepper, if you like. Pour mixture into the buttered casserole dish and bake for about 40 minutes or until pudding is set and slightly golden. Enjoy!

Apologies & Gratitude
I had another friend recently stop by and apologize for something that happened more than 15 years ago. I was so impressed that she did that. So this Thanksgiving I’m inspired by her act of bravery. I’m going to be thinking about all the things I’m grateful for but also pondering anything I might apologize for if I had the chance. Make a list and see what you come up with!
